This Donabe Steamer, made by Nagatani-en, is loved by both professional chefs and home cooks. Nagatani was founded in 1832 is one of the leading producers of Iga-yaki pottery which is one of Japan’s most highly regarded traditional ceramics. Each donabe is made by skilled craftsmen and takes around two weeks to be made. “Kamado-san”, has been a best-seller product in Japan. Premium-quality rice with easy preparation and one heat level needed. Set the heat to medium-high and leave it there until it’s done. The glaze on the surface of the donabe promotes the far infrared radiation (FIR) when heated. FIR helps the heat penetrate into the core of each grain for even cooking. It has the unique double-lid feature which produces the effect of pressure-cooking. The bottom of “Kamado-san” is about 1.5 times thicker than a regular donabe. Even after the heat has been turned off, the clay continues to steam-cook the rice until ready. Like all donabe from Iga, the “Kamado-sans” will last for many decades.
